If you haven’t guessed by the cocktail recipes I have shared over the last few weeks, I am a huge fan of tropical drinks in the summertime. Especially those that contain coconut or other tasty tropical flavors like the Pink Hawaiian above.

Changing up a classic recipe!
Taking a classic cocktail that everyone already knows and loves and giving it a tropical spin that is perfect for a summertime drink goes over pretty well on girls’ night.
This week I have taken the oh so delicious White Russian and given it a mighty tasty tropical twist, simply by replacing the cream with cream of coconut or coconut milk for a lighter version. When I think of a White Russian, I always think of my beautiful daughter-in-law. When they were here to visit, we enjoy a few pretty strong White Russians while relaxing on the porch. Oh, how I wish she was here to share my coconut version. I think she would love them!
Ingredients:
- Ice Cubes
- 2 oz. Coffee Liquor
- 2 oz. Vodka
- Coconut cream
or Coconut milk - Toasted Coconut for garnish (optional)
- Pretty Paper Parasols (optional)

In a rocks glass, add ice cubes. Pour the coffee liquor and vodka over ice. Top with Coconut cream. Stir and add your paper parasol. Sprinkle some toasted coconut over the top for garnish if you like.
