Making Pumpkin Muffins With Cake Mix

Is making pumpkin muffins with cake mix cheating? Maybe. Fortunately, the convenience and taste make these 2 ingredient pumpkin muffins worth it.

Using a cake mix saves you time and effort. You won’t have to worry about combining all the dry ingredients when it’s already mixed in one handy container. Time can be of the essence, so use the premixed spice cake!

You don’t have to mix the cake mix with the ingredients listed on the box for this recipe. No eggs, butter, or vegetable oil is necessary.

Another bonus is that you can get creative with your cake mix selection. While spice cake is listed, you can also try yellow cake mix, chocolate cake mix, or carrot cake mix. Try something new each time.

Ingredients for Muffins

Spiced cake mix. Spice cake might vary slightly based on the brand, but it typically includes cinnamon, ginger, cloves, and nutmeg.

Canned pumpkin puree. Be sure that you purchase 100% pumpkin. Pumpkin pie filling is different and will not yield the same results.

Water (optional). A little water can moisten the batter and make mixing more manageable, especially if mixing by hand.

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Insert muffin liners or use cooking spray to grease a 24-count mini muffin pan.
  3. In a large bowl, fold the pumpkin into the cake mix. If using water, add it now.
  4. Using an electric mixer, mix until combined.
  5. Using an ice cream scoop, fill each muffin tin space ¾ full with the batter. Without the addition of water, it will be thick.
  6. Bake mini muffins for 10 minutes. Check for doneness with a toothpick. If the toothpick comes out clean, remove the muffins from the oven. If it requires more time, check again after 12 minutes.
  7. When done, remove them from the oven and allow them to cool. Enjoy!

Pumpkin Muffin Making Tips

Use a Hand Mixer

While it is possible to mix these healthy pumpkin muffins by hand, things will be far easier with a hand mixer. If you must mix by hand, using the water can help to ease things a bit. The water also helps the muffins to settle into the pan, so if you want tidy muffins, the addition can help you to achieve that.

Add a Little Water

2 ingredient pumpkin spice muffins can be smoothed without the addition of water by leveling them with a spatula. The taste will remain the same, but the appearance will improve.

Add Additions or Toppings!

You can also add to the recipe to create different variations. While it will not be a 2 ingredient pumpkin muffins recipe, add extra pumpkin pie spice, a couple of cups of chocolate chips, or cream cheese frosting. Pecans, walnuts, and raisins are other possible additions.
