Baby it’s cold outside! Nothing says comfort food in the winter more than a hearty bowl of stuffed pepper soup! If you are a fan of stuffed peppers in the oven, you will fall in love with this slow cooker easy meals version in a bowl. By now you know you know that the teens are very picky. This is not something they will try, that is for sure.

Hubby and I are completely fine with that … more for us! We love to make a big crockpot full of this fantastic stuffed pepper soup and freeze it in smaller portions to have through the winter months when we have a craving.  This soup is a very hearty meal, and is packed with peppers and tomatoes with just the right amount of heat to warm you up inside. And, it’s a great meal when you’re looking to use up leftover ground beef.

Ingredients

1 1/2 pounds lean ground beef (or ground bison)

1 28 oz. can crushed tomatoes

1 28 oz can tomato sauce

4 Cups beef broth (or a beef broth substitute)

3 bell peppers – chopped (choose your favorite color – we like red & green mixed)

1 medium onion – chopped

1 Tablespoon black pepper

1 Tablespoon Crushed red pepper

1/4 Cup sugar

1 Cup of white rice

Salt to taste

Brown the ground beef in a medium skillet. Drain the fat.

Combine the cooked ground beef and all remaining ingredients in the slow cooker. Stirring it well to combine.

Cook the Stuffed Pepper Soup on high for 4 – 5 hours. Until the peppers and the rice is soft and cooked fully.

Serve your hearty Stuffed Pepper Soup with a fresh green salad and some crusty bread to soak up all the mouth watering juices. It is just the perfect comfort food on a blistery cold winters day.
