If you are in need of a quick sweet treat, you won’t be disappointed with these Chewy Chocolate Brownie Cookies! Slightly crunchy on the outside with a warm chewy center studded with dark chocolate chips. These cookies have all the flavor of your favorite brownies just cookie-fied! (I know that’s not a real word, but today it is!) My favorite part of this recipe is that it is a semi-homemade recipe. Add a few pantry staples to your favorite boxed brownie mix and you will have everyone thinking you made this recipe from scratch. I am such a fan of any helpful shortcuts in the kitchen.

Ingredients:
1 box of your favorite brownie mix
1 Cup flour
1/4 Cup light brown sugar
1/2 Cup butter (melted and cooled)
2 cups dark chocolate baking chips
3 Tbs water
Directions:
Preheat oven to 350 degrees, lightly spray a baking sheet with non stick cooking spray.
Whisk together brownie mix, flour and brown sugar.
Stir in eggs, butter and water until completely combined. The batter will be thick.
Fold in chocolate chips.
Drop by rounded teaspoons onto your baking sheet. Flatten slightly (you want a thick gooey center so don’t flatten them to much)
Bake 8 – 12 minutes depending on how you like your brownies. less time will give the cookies a softer texture, more time will give the cookies the crunchy outside edge of the brownies taste.
Place your cookies on a cooling rack to cool completely.
Makes about 36 cookies depending on the size.
Just look at all the nooks and crannies! You can see the gooey center and the crunchy edges right away. Adding the dark chocolate chips just takes the chocolate level through the roof! We love these served warm with a big tall glass of ice cold milk.
You can’t dunk a traditional brownie in a glass of milk, right? Well you certainly can with these babies.
