I have been making marshmallow never fail fudge for as long as I can remember. My ex-mother in law taught me how to make it when I was newly married and still oh so young. She would spend hours upon hours, days upon days, making all of the goodies for Thanksgiving and Christmas. Spending time with her in the kitchen is one of my most cherished memories. Boy did I learn a lot. She had some of the best from scratch recipes. The one thing she always made was never fail fudge. Creamy chocolate, rich and decadent fudge. Now don’t get me wrong, I love it just as much, and still to this day make it every year. This year I wanted to try something a little different. I wanted to put a holiday spin on the next batch.
There is nothing better than peppermint to give it that holiday touch. Mocha is the perfect pairing for peppermint and chocolate. My love for mocha runs deep. I’m pretty sure you could tell when I shared the Chocolate Mocha Cupcakes with Kahlua Frosting! Mmmmm, Mocha goes with so many wonderful flavors, this Peppermint Mocha Fudge is just another perfect example.
Helpful Kitchen tools used to make this recipe:
Peppermint Mocha Fudge – A Never Fail Fudge Recipe
- 2 1/2 c. granulated sugar
- 1/2 tsp. salt
- 1/2 stick (4 Tablespoons) butter or margarine
- 1 5 oz. can evaporated milk (2/3 c.)
- 1 Jar (7.5 oz) Marshmallow Fluff
- 2 teaspoons instant coffee or espresso powder
- 1 tsp. vanilla
- 1 12-oz. package semi-sweet chocolate chips
- 2 candy canes crushed
Lightly grease a 9×9 square pan and set it aside.
Combine the first 6 ingredients in a large saucepan.
Stir over low heat until blended. Increase heat to Medium and bring to a full-rolling boil, being careful not to mistake escaping air bubbles for boiling.
Boil slowly, stirring constantly for 5 minutes.
Use the Soft-Ball test for doneness, or use a candy thermometer to reach 235 degrees Fahrenheit.
Remove from heat, stir in vanilla and chocolate until chocolate is completely melted.
Turn the fudge mixture into the greased pan and top with the crushed candy canes immediately.
Cool completely before cutting.
Cut into squares and serve at room temperature.
Makes approximately 2 pounds.
You won’t believe just how creamy and rich this fudge is. A touch of coffee flavor and a punch of peppermint is a perfect balance and adds that little touch of Christmas to your fudge. If you want even more peppermint flavor, add 1 teaspoon of peppermint extract at the same time you add the vanilla and chocolate chips. The teens aren’t super crazy for peppermint, but love candy canes (go figure) so adding them just to the top is perfect for us.
