Mexican Spaghetti (also known as Fideo (fee-DAY-oh) or sometimes as Taco Spaghetti) is an easy-to-make meal that is absolutely delicious.

It is perfect for those busy weeknights when you need to get dinner on the table quickly.

Mexican spaghetti is a great weeknight meal because it’s easy to make and it’s affordable. This recipe only calls for one pot, so there’s less cleanup. And since ground beef is a relatively cheap protein, this dish is easy on the budget.

The basic dish can easily be enhanced with ground beef, tomatoes, onions, garlic, and spices. It is then topped with shredded cheese and chopped green onions. And if you have any leftover sour cream, serve your pasta with a side of sour cream for an extra bit of flavor.

What is Fideo?

The word “fideo” means noodle in Spanish. Sopa de Fideo (or Noodle Soup) is also a popular recipe in Mexican. According to the Chicago Tribune, fideo noodles are thin and round pasta (similar to angel hair pasta) that go into soups or casseroles with a tomato-based soup.

However, the recipe below is super easy to make. So make these delicious noodles at home. As I have mentioned for the 1000th time, this is a super easy meal to whip up during a weeknight. In fact, it is one of my go-to when life gets super busy during the week.

Is Spaghetti popular in Mexico?

Pasta is a popular dish in many parts of the world, but it is not typically associated with Latino or Latin American cuisine. According to Google Trends, the search demand for “pasta” in Mexico has steadily increased over the last five years (see screenshot below).

in Latin America, some countries in these regions have adopted pasta and created their own delicious versions. Mexico is one such country. In Mexico, pasta is often served as Fideo or Sopa de Fideo. This helps demonstrates that pasta is a delicious and versatile dish that can be enjoyed by everyone.

Mexican Spaghetti Ingredients

  • 8 ounces of spaghetti
  • 1 Bay leaf (or a bay leaf substitute)
  • Olive oil
  • 2 lbs roma tomatoes
  • 1/2 a white onion
  • 2 garlic clove
  • 2 tsp chicken or tomato bouillon powder
  • 1/4 tsp cumin
  • 4 tbsp butter
  • 4 ounces cream cheese
  • 1 cups water
  • Cotija cheese, for serving

Instructions

Start by cooking the noodles

  1. To cook the spaghetti, boil water in a pot with salt, the bay leaf, and a little olive oil. The olive oil helps ensure that the spaghetti noodles do not stick together. Cook your pasta according to the package instructions but leave it al dente. Then set aside.

Next, create the Mexican Spaghetti Sauce

  1. While your spaghetti is cooking, boil your onion, garlic, and tomatoes for about 10 minutes.
  2. When your onion, garlic, and tomatoes are tender, add to blender and blend until smooth.
  3. Add cream cheese cumin, 1 cup water, and bouillon to blender and blend until fully incorporated.

Once noodles are done cooking, combine the noodles and the sauce

  1. In a large sauté pan on medium heat, melt the butter, being careful that it doesn’t burn.
  2. Once the butter is melted, add the pasta and then the tomato sauce slowly, adding as much as you want. I like saucy pasta, but not everyone does 😉
  3. Sprinkle with cotija cheese and serve.
