I am so glad the teens are growing out of their picky phase. They still have a long way to go, but we are making serious progress. When both of them were younger they didn’t like bacon (seriously!?!? ..who’s kids are these?), barbecue sauce and one of them even went through a phase of not liking chocolate! Sure, it’s still impossible to get them to eat broccoli or even onions but I’m sure that too will pass over time. Now that they have “aquired” a taste for bacon (lol) and barbecue sauce, one of our favorite Easy Meals to prepare is definitely Monterey chicken. The smokiness from the barbecue sauce paired with the salty crunch of the bacon is heaven on a plate. Topped with some melted cheddar cheese and you will be the star of the kitchen for sure. Pair this mouth watering chicken with a baked potato and corn on the cob for a quick & easy dinner any night of the week.
Ingredients:
4 Boneless, skinless chicken breast
1/2 Cup Sweet Baby Rays BBQ Sauce
1 Cup Sargento shredded cheddar
1/2 Cup Oscar Mayer Real Bacon Bits
chopped green onions (optional)
Directions:
Preheat oven to 350 degrees
Line a baking pan with foil, and spray with non stick cooking spray.
Brush each chicken breast with a generous amount of barbecue sauce on both sides.
Bake in a 350 degree oven for 25 minutes or until the center is no longer pink. (oven cooking times may vary)
Remove the chicken from the oven and top with 1/4 cup shredded cheddar cheese on each. Sprinkle with bacon bits and return to the oven for 5 minutes, or until the cheese has melted.
Garnish with green onions if desired.
This dish is also perfect for a Make Ahead Freezer Meal! You can prep this chicken one of two ways. 1. clean and trim your chicken breast. Place in a ziploc freezer bag with the barbecue sauce. Remove as much air as possible and place it in the freezer. or 2. Follow the steps above, with the exception of adding the cheese, bacon and onions. Let the chicken cool and then properly store in ziploc bags in the freezer.
I prefer cooking the chicken in the barbecue sauce and separating it into single portions to go into the freezer. We like to keep this chicken prepped for quick easy meals, sandwiches for lunch and for “whatever” nights (leftover night)
