Since today is his birthday, I decided to whip up a batch of mini cheesecakes just for him. Of course, I had to add in his favorite flavor … Birthday Cake! Making cheesecake isn’t as hard as it may seem, or as hard as you have been taught to believe. These cute little Mini Birthday Cake Cheesecakes can be made in less than an hour, and taste absolutely wonderful. The perfect amount of sweetness and a little bit of tang from the cream cheese pair just right with each other. What are you waiting for? Grab your muffin tins and let’s get started!
Makes 12 medium size “cupcakes” or 24 minis
Ingredients:
8 oz. cream cheese (softened)
1/4 Cup granulated sugar
1 tsp. vanilla extract (or a vanilla extract substitute)
1 large egg
1/4 Cup sour cream
1/3 Cup dry Yellow Cake mix
1/4 Cup rainbow sprinkles
12 Vanilla Wafer Cookies
Directions:
Preheat oven to 300 degrees. Place cupcake liners into your muffin tin. Drop one vanilla wafer in the bottom of each cupcake liner.
(Disclaimer: I sent hubby to the store for vanilla wafers and he came back with an off brand that wasn’t quite large enough to fill the base of the cupcake liner. Instead, I crumbled 2 vanilla wafers into the cupcake liner to make sure there was enough”crust” on the bottom)
In a medium bowl, mix your softened cream cheese for 2 minutes. Add in your sugar and mix for an additional 2 minutes.
Mix in your vanilla, egg and sour cream until smooth.
Mix in your cake mix and rainbow sprinkles just until everything is combined. Do not over mix.
Divide the batter equally on top of the vanilla wafer in each cupcake liner. Fill each cupcake liner almost to the top.
Sprinkle with additional rainbow sprinkles before baking.
Bake in 300 degree oven for 30 minutes. Remove from the oven and let them cool completely before serving.
Serve at room temperature or chill for a few hours. Top with whipped cream and sprinkles if desired.

I like your simple how-to steps for these cheesecake cupcakes. The Vanilla wafers on the bottom are different and funny on the disclaimer. I had to pin them and I catch myself thinking about your creations a lot.
