When it comes to making desserts, you will usually find me in the kitchen baking up something extra sweet and full of calories like my Chocolate Mocha Cupcakes with Kahlua Cream Cheese Frosting. I am still a sucker for a nice fruit dessert, even one that is a little bit better for you than the dense richness of a chocolate cake. Fruit and yogurt are 2 of my favorite “healthy” snacks. When I can pair them together to make a creamy and delicious dessert as simple as this Better For You – Strawberry Jell-O Yogurt Snack Bites, I am completely and 100% satisfied.
I remember when ever we would have family cook outs, or get togethers one of my beautiful aunts would make a Jell-O pie using yogurt and cool whip all mixed together in a graham cracker shell. As delicious as it was, I was trying to come up with something a little more on the healthy side with smaller portions. That is how the Strawberry Jell-O Yogurt Snack Bites were created.
Here is how we made them …
Ingredients:
- 3 6oz. cups Strawberry Banana yogurt (or 1 1/2 cups)
- 1 3oz. package Strawberry Jell-O
- Toppings (cool whip, granola, fresh fruit, candy)
Instructions:
In a microwave safe bowl, mix together the yogurt and the Jell-O.
Microwave on high for 2 minutes. Stirring after 1 minute and at the end of the cooking time.
Pour the Jell-O yogurt mixture into cupcake liners.
Chill until firm. (1 – 2 hours)
Top with your favorite toppings and enjoy!

We have also tried vanilla + orange Jell-O, this tasted like a creamsicle to us it was fantastic! Blackberry yogurt + wild berry Jell-O. Vanilla yogurt will take on any flavor Jell-O that you love.
