WOW! The amount of zucchini that is growing in every ones garden is amazing! As you all know (or if you are new here, take note lol) I do NOT garden! So my garden isn’t doing much of anything but growing weeds 🙂 I do however have some awesome friends that love to share their harvest with me. Gosh, I love them! We have been given so many fresh zucchini this year, and we have to get creative using it. I love a good Zucchini Bread, almost as much as I love a simple sauted zucchini with butter and garlic. Sometimes you just want something a bit lighter and easier on the waist line.

Zucchini with Sour Cream Sauce
Ingredients:
3 Cups Zucchini – sliced
1 small onion – sliced
1/2 Cup water
2 bullion cubes (chicken or vegetable)
1/4 tsp. dill weed
1 tsp. sugar
1 tsp lemon juice
1 Tbs butter
2/3 Cup sour cream (or a sour cream substitute)
1 Tbs flour
Directions:
In a saucepan, combine the zucchini, water, onion, salt, bouillon and dill. Bring to a boil.
Reduce heat; cover and simmer for 5 minutes or until the zucchini is tender.
Reduce heat to low and stir in the butter, sugar and lemon juice.
In a separate small bowl combine the sour cream and flour until smooth. Gradually add it to the saucepan.
Cook over low heat for 5-7 minutes or until thickened.
Serve immediately.
Honestly, this looks perfect. I’ve done Zucchini lasagna and love Zucchini Bread the most. No friendly harvest…have to get at the store.

Wow, this was absolutely the best, we grow a lot of zucchini so I’m always looking for new recipes to try, this one is my favorite , I followed the recipe exactly , would also be great to add any protein ( meat etc.) to it
