Why Cake Mix Cookies?
As you may know, I love to bake from scratch! Everything from our fabulous Neiman Marcus Chocolate Chip Cookies to Mocha Cupcakes with Kahlua Cream Cheese Frosting. Every now and then, I like a quick, easy, no thinking involved recipe that tastes great and pleases the masses. That is where the cake mix cookies come in. They start with your favorite cake mix, and end with a moist, soft, delicious cookie that uses only THREE ingredients, and are ready in about 10 minutes. So easy even the teens make them on a regular basis.

How to make:
Making cake mix cookies is as easy as combining your favorite cake mix, 2 eggs, and 1/3 cup vegetable oil. Your dough will be very thick, so mixing by hand or using a KitchenAid is best. It is too thick for an average hand mixer.
Once your dough is mixed, spoon out 1 – 2 Tablespoons of dough onto an UNgreased cookie sheet. I love to use a Mini Ice Cream Scoop so they are all uniform in size. If you want your cookies thick and chewy, bake them as is. They will spread out slightly once they are baked.
I like mine a bit on the flatter side for the Witches Hats, so I took a regular glass, dipped the bottom in granulated sugar and flattened the dough balls down a bit. This also decreased the baking time a little. Bake in a 350-degree oven for 10 – 12 minutes. Just until the edges are slightly golden.
Decorating
Once the cookies are baked, transfer them to a wire baking rack to cool completely. Just look at how perfect they come out, every time. The sugar from the glass also adds a nice crunch to the top of the cookie, while the inside is still moist and delicious!
After the cookies are completely cooled, top each one with colored frosting and an unwrapped chocolate kiss candy. Add your favorite Halloween Sprinkles to the cookie right away. You want to be sure to add the sprinkles before the frosting has a chance to harden, or they will not stick.
Now, do you see why these are one of our favorites? They were mixed, baked, and decorated all in 30 minutes. We all love an easy recipe that still tastes great, and looks fabulous too. I do wish I had made the actual cookie part just a tad bit smaller so they looked a bit more like Witches Hats, but the teens loved them, and I will take a big delicious cookie over a small one any day!
My favorite was the white frosting with the black and orange candy balls. Who am I kidding, they all tasted great and didn’t even last 2 days in our house.

I am so intrigued by the idea to make cookies with a cake mix and I like how nice they look with pressing down with the bottom of a glass.
I have never made cookies from cake mix, but you can bet I am going to do it now! I can see this recipe being a huge hit with my teenagers. They love to bake, but are more focused on eating, so they want something easy and quick. This fits the bill. Thanks !
