Ingredients
4boneless, skinless chicken breastscut into bite-sized cubes or chunks
1lbItalian sausage hot or mild, cut into 1-inch pieces
1lbpotatoes cut into 1-inch cubes, optional if you are going low-carb
1vidalia onion sliced
1yellow bell pepperssliced
1orange bell peppersliced
½cuppeppadew peppersdrained and roughly chopped
½cuppepperoncini or hot cherry peppers drained and roughly chopped
½cup pepper brine from the jar of peppers
4garlic clovesminced
½cupall-purpose flour
½cupwhite wine
1cupchicken broth
1cupcrushed tomatoes
2tbspolive oil
2tbsp unsalted butter
Salt and pepperto taste
¼cupfresh basilchopped
1lbangel hair pastacooked al dente
Instructions
In a large bowl, dredge the chicken cubes in flour, shaking off any excess. Set aside.
Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium-high heat. Add the sausage pieces and cook until browned on all sides, about 5-7 minutes. Remove the sausage from the pan and set aside.
In the same skillet, add the remaining tablespoon of olive oil and the butter. Once the butter has melted, add the floured chicken cubes and cook until browned on all sides, about 5 minutes. Remove the chicken from the pan and set aside with the sausage.
Reduce the heat to medium and add the onion, bell peppers, and potatoes to the skillet. Sauté for 5-7 minutes, or until the vegetables have softened slightly.
Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.
Pour in the white wine, scraping up any browned bits from the bottom of the pan. Cook for 2-3 minutes to allow the wine to reduce slightly.
Stir in the chicken broth, crushed tomatoes, peppadew peppers, pepperoncini, and pepper brine. Bring the sauce to a simmer.
Return the cooked chicken and sausage to the pan, stirring to combine with the sauce and vegetables. Cover the skillet and let it simmer for 15-20 minutes, or until the potatoes are tender and the chicken is cooked through.
Meanwhile, cook the angel hair pasta according to the package instructions until al dente. Drain and set aside.
Once the chicken, sausage, and potatoes are cooked, stir in the chopped fresh basil and season the sauce with salt and pepper, to taste.
To serve, place a bed of cooked angel hair pasta onto each plate and top with a generous portion of the Chicken Murphy mixture, making sure to spoon plenty of the sauce on top.
