Add the chicken thighs, Pepperoncini peppers, chicken broth and Ranch seasoning to the Instant Pot.
Set your Instant Pot to High Pressure for 8 minutes.
After 8 minutes let the steam naturally release for 5 minutes, then quick release the rest of the way.
Shred chicken with a fork and serve over rice or cauliflower rice.
