Instructions
Prepare the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water and then drain the pasta.
Sauté Garlic: While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
Cook the Tomatoes: Add the halved cherry tomatoes to the skillet. Cook for 5-7 minutes, or until they start to soften and release their juices.
Wilt the Spinach: Add the baby spinach to the skillet and cook until wilted, about 2-3 minutes.
Add Basil and Season: Stir in the chopped fresh basil and season with salt and pepper to taste.
Incorporate Boursin: Reduce the heat to low and add the Herb Boursin cheese to the skillet. Stir until the cheese is melted and forms a creamy sauce.
Combine and Serve: Add the cooked pasta to the skillet and toss to combine. If the sauce is too thick, use the reserved pasta water to thin it out to your liking. Serve hot, garnished with grated Parmesan cheese if desired.
