2cupsmixed fresh or frozen veggies fresh or frozen
28ozcrushed tomatoes
6cupsbeef or vegetable broth
1ozpacket onion soup mix
1 cup macaroni noodles or pasta of choice

Instructions
In a large stock pot or Dutch oven, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened and fragrant, about 5 minutes.
If using meat, add it to the pot and cook until browned. Drain fat, if necessary.
Stir in the mixed vegetables, diced tomatoes, broth, and onion soup mix. Bring the soup to a boil, then reduce the heat and let it simmer for about 20 minutes until the vegetables are tender.
In another pot, cook the pasta separately, according to the package instructions, until al dente. Drain and set aside.
Taste the soup and adjust the seasonings with salt and black pepper, as needed. Add the cooked pasta to the soup just before serving.
Serve hot, garnished with fresh herbs or grated cheese.
