Instructions
Combine the peanut butter, softened butter, powdered sugar, and vanilla extract in a large mixing bowl. Stir until well combined and smooth.
Refrigerate the peanut butter mixture for 30 minutes or until firm enough to shape into balls.
Line a baking sheet with parchment paper or wax paper. Using a small cookie scoop or your hands, place the peanut butter mixture into 1-inch balls on the prepared baking sheet.
Place the peanut butter balls in the freezer for 15-20 minutes to firm up.
In a microwave-safe bowl, combine the chocolate chips and coconut oil. Melt in the microwave in 30-second intervals, stirring in between, until smooth and entirely melted.
Remove the peanut butter balls from the freezer. Dip each ball into the melted chocolate using a fork, allowing any excess chocolate to drip off before placing it back on the baking sheet.
If you want, sprinkle the peanut butter balls with sea salt, sprinkles, crushed peanuts, or oats, or drizzle with melted white chocolate for decoration.
Refrigerate for 15-20 minutes or until you can't wait any longer ;)
