2½cupsall purpose flour
2tbspbaking powder
1tspbaking soda
½cupsalted buttermelted
1cupbrown sugar
2eggslarge
1tspvanilla extract
1tspbutter extract
¾cupwhole milk
¼cupspiced rum
12ouncesbutterscotch chipsoptional
Instructions
Preheat the oven to 350 degrees Fahrenheit and spray a muffin tin with oil. You may also use liners.
In a medium bowl, combine the dry ingredients: flour, baking powder, and baking soda. You may use an electric mixer or whisk.
Using a large bowl and a hand mixer, combine the melted butter, sugar, eggs, vanilla extract, and butter extract.
Add the milk and rum to the butter mixture and mix on low speed until combined.
Slowly add the flour mixture to the wet ingredients and continue until just combined.
Fold in the butterscotch chips with a rubber spatula.
Transfer the muffin batter into the prepared muffin pan with a cookie scoop; ensure they are filled to ¾ full.
Bake for 22 minutes or until a toothpick can be inserted and removed clean.
Allow the muffins to cool slightly before removing from the muffin pan or enjoying them. When they're cool enough to touch, hot buttered rum muffins can be moved to a wire rack.
