Moist & Delicious Strawberry Bread

Your going to love this Quick & Easy bread recipe!

It has been such a crazy end of the month around our house. With school starting up again in just 2 1/2 week (yay and yikes!) We have been running around like crazy people trying to get everything ready and in order so the boys  are all ready to go when the day comes.

Having 2 teenage boys at home is worse than having all 4 when they were little. One of the teens (15) is so laid back and a “what ever you think mom” kind of kid. And the other (13) that is a little more high maintenance. Very picky about everything, from clothes to school supplies.

It’s funny tho, all 4 boys are so different in so many ways. Sure they have a few things in common, but their individual personalities are all from different ends of the spectrum. I wouldn’t have it any other way!

The one thing they all love (besides their mom 🙂 ) is breakfast! Any kind of breakfast really. Bacon, eggs, pancakes you name it. And cereal .. Nick (21) is a cereal fanatic. I think he could have cereal for breakfast lunch dinner and a few snacks every day.

I like to make different quick breads for breakfast. Especially on those busy mornings when we are all rushed and trying to run out the door. This week, I think I will focus on a few of my favorite quick bread recipes.

We just made this super easy Strawberry Bread that was a huge hit with the teens. So I will share this one first. We just love fresh fruit (and veggies) in quick breads. I hope you enjoy the recipes as much as we do.

Ingredients

2 Cups flour
1 teaspoon baking soda (or a baking soda substitute)

1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1 large egg
3/4 Cup sugar
1/4 Cup brown sugar
1 Cup buttermilk (or 1Tablespoon lemon juice added to a 1 cup measuring cup. Fill with whole milk to make 1 Cup. Let sit for 5 minutes to “spoil”)
1/3 cup vegetable oil
2 teaspoons vanilla
2 cups fresh strawberries – chopped

Instructions

Preheat oven to 350 degrees. Lightly grease and flour loaf pan.

In a large mixing bowl combine the flour, soda, salt and cinnamon. Set aside
In a medium bowl whisk together the egg and both sugars until combined. Whisk in the buttermilk, oil and vanilla until combined. Pour the wet ingredients into the dry and mix, just until combined. Do not over mix.

I like to coat the chopped strawberries in a little flour before adding them to the wet mix. So they don’t sink to the bottom of the bread.
Fold the strawberries into your mixture.
Bake in 350 degree oven for 50 – 60 minutes. Until a tooth pick inserted in the center comes out clean.

Occasionally I add a quick glaze to the quick breads I make. If you would like to make a glaze, combine 1 cup powder sugar, 2 Tbs milk and a 1/2 teaspoon of vanilla together until smooth. Drizzle over your cooled bread.

There you have it! Super simple and very easy to whip up for a nice quick breakfast on the go.
