Take your taco obsession to the next level with Chipotle in Adobo! Chipotle Lime Shredded Beef Tacos will make your Taco Tuesday extra spicy!
Ingredients
2-4 lb. Beef roast cut into cubes
1Tbs. vegetable oil
2 - 4 LA MORENA® Chipotle Peppers in Adobo (7oz jar) diced - more chipotle peppers = more heat/remove the seeds for a more mild flavor
1 14 oz. can beef broth
zest and juice of 1 lime
½ Cup honey
1 teaspoon salt
1 teaspoon pepper
½ Tablespoon cumin
1 Tablespoon oregano
1 Tablespoon garlic powder
1 Tablespoon onion powder
Instructions
Sear the meat in the vegetable oil on all sides. Once browned place the meat into your crockpot.
Add the chopped LA MORENA® Chipotle Peppers in Adobo, beef broth, lime juice, lime zest, honey and spices to the crockpot.
Cover and cook on low 6 to 8 hours depending on the size/cut of meat. Cheaper meats with more fat will take longer to become tender enough to pull apart. (2 lb. chuck roast with most of the fat removed took 5 hours in my crockpot)
Once the meat is tender enough, transfer to a plate or cutting board. Using 2 forks or your hands if it is cool enough, shred the meat.
Serve on a fried tortilla with your favorite taco garnish. We used avocado, cilantro, and queso fresco. Simple and delicious!
