Moist & Delicious Strawberry Bread

Quick and delicious bread for bread dessert or anytime!
Ingredients
  • 2 Cups flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon ground cinnamon
  • 1 large egg
  • ¾ Cup sugar
  • ¼ Cup brown sugar
  • 1 Cup buttermilk (or 1Tablespoon lemon juice added to a 1 cup measuring cup. Fill with whole milk to make 1 Cup. Let sit for 5 minutes to “spoil”)
  • ⅓ cup vegetable oil
  • 2 teaspoons vanilla
  • 2 cups fresh strawberries – chopped
Instructions
  1. Preheat oven to 350 degrees. Lightly grease and flour loaf pan.
  2. In a large mixing bowl combine the flour, soda, salt and cinnamon. Set aside
  3. In a medium bowl wisk together the egg and both sugars until combined. Wisk in the buttermilk, oil and vanilla until combined. Pour the wet ingredients into the dry and mix, just until combined. Do not over mix.
  4. I like to coat the chopped strawberries in a little flour before adding them to the wet mix. So they don’t sink to the bottom of the bread.
  5. Fold the strawberries into your mixture.
  6. Bake in 350 degree oven for 50 – 60 minutes. Until a tooth pick inserted in the center comes out clean.
