Easy Mexican Rice with chicken - Weeknight Meal

Ingredients
  • 2 chicken breasts (cooked and cubed)
  • 1 package Knorr Taco Rice Side dish
  • 1 10 oz. can petite diced tomatoes
  • Toppings (optional): Cheddar cheese, sour cream, sriracha
Instructions
  1. Prepare the rice according to the package directions.
  2. Add the cubed chicken and tomatoes. Heat through 3 – 4 minutes.
  3. Serve with your favorite taco toppings and Jiffy Cornbread muffins. Makes 5 1 cup servings.
