8eggsyou can also use egg whites if that's your thing
½cupwhipped cottage cheeseor regular
1tspgarlic powder
1tsponion powder
½cupshredded Gruyere cheese or shredded cheese of choice
Kosher salta pinch
freshly ground black peppera few twists
cooking spray
For Toppings
¼cupbacon or pancettacrumbled
1Roma tomatodiced
¼cupsun-dried tomatoes diced
shaved Parmesan cheeseto sprinkle on top

Instructions
Preheat the oven to 325 degrees and gather your ingredients.
As soon as you turn on your oven to preheat, place your water bath on the bottom rack.
In a blender, make your egg mixture by combining the eggs, cottage cheese, Gruyere cheese, garlic powder, onion powder, black pepper, and salt. Blend until smooth.
Spray the insides of your silicone muffin pan and pour your egg mixture in equal amounts into each cup. You should have enough for all twelve cups.
Once you've poured your egg mixture into the muffin pan, top with whatever toppings you're in the mood for.
Place in your oven and bake for 40-45 minutes until the egg bites are firm to the touch.
Serve hot with your favorite hot sauce!
Notes
If you’re not using a silicone muffin pan or egg mold, your egg bites will cook much much faster. So check them after 10 minutes if using a traditional muffin pan. Toppings are your friend! Get creative and don’t feel confined by my recommendations. You could even go a little savory and sweet with less garlic and onion powder and adding a bit of maple bacon. If you’re watching your wallet, swap the gruyere cheese for a sharp cheddar cheese, mozzarella, or whatever you find on sale in your local grocery store. Let’s be honest: Cheese is delicious and it’s hard to go wrong when it comes to cheese.
