In a small bowl, combine the dry ingredients: flour, baking soda, cocoa powder, espresso powder, and salt. Set aside.
In large bowl, cream/mix butter, sugars, and vanilla until smooth.
Beat in eggs.
Blend in flour mixture and chocolate chunks.
With a cookie scoop, drop teaspoons onto greased non-stick cookie sheet.
Bake 8-10 minutes.
Place on a cooling rack, sprinkle with sea salt, and enjoy! Makes about 48 cookies.
Notes
If you're looking for a heavier espresso flavor and lighter on the chocolate, just reduce or eliminate the cocoa powder. Looking to mix it up more? Try adding white chocolate instead of dark chocolate. You can also make this a chocolate chip instead of a chunk recipe. I have found that sometimes they can be hard to find.This recipe makes about 48 cookies.
