Flaky Chicken Pot Pie with CrockPot Cauliflower Mash

Ingredients
1large head of cauliflowerWalmart produce has wonderful fresh cauliflower at a very reasonable price!
3Cupschicken or vegetable broth
1tbsminced garlic
2tbsbutter
1/4Cupreal parmesan cheese
2tbsmilk
1tbsparsley
salt & pepper to taste
Instructions
Chop cauliflower into florets, place in your crockpot.
add the stock and the garlic to your cauliflower.
Cook on high 3 hours (or low 5 – 6 hours) or until the florets are fork tender
Once the cauliflower is very soft, drain off the remaining liquid.
Mash the florets with a fork.
Add in the butter, parmesan cheese, milk, parsley and salt & pepper.
Using a hand mixer, whip the cauliflower and seasonings until almost smooth. I like a few bigger bits of cauliflower in mine. This is a personal preference, you can leave it as chunky or mix it as smooth as you would like.
Top with a little butter and a sprinkle of parsley for a garnish (optional).
Serve hot, along side your flaky Marie Callender’s pot pie.
