Apples and Spice – Muffin Recipe

This afternoon around my house was very quiet and kid free. I knew this day would come eventually when all my kids were busy and off doing fun stuff with friends, but I don’t think I was prepared for it to happen. If you follow me on Facebook, you already know how much of an issue I’m having with not having to take the kids trick or treating this year. It’s the first year they can all go by themselves with friends.

It was bound to happen eventually I guess. So this afternoon I decided since I had the house to myself I would do a little baking. I attempted those really pretty apple pie pastries that look like roses. It was an epic FAIL! I can’t even show you the disaster it was that bad. Well, I had lots of sliced apples left and I did not want them to go to waste. I have a family spice cake recipe that I love so I chopped the apples and decided on these Fantastic Apple Spice Muffins.

This recipe was hand written on the back of an envelope in a box full of my Grams recipes. I have no idea where it came from originally. In my mind it was my Grams so that alone makes it all the more special.Do you have any family recipes that were past down from generation to generation? I hope you enjoy this Apple Spice Muffin recipe as much as we do. It came out so much better than I expected with the addition of the apples. This recipe makes 12 large muffins. You may want to double it if you’re feeding a large family …or hungry boys!

Ingredients: 

  • 1/2 c vegetable oil
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup flour
  • 1/2 tsp baking soda (or a baking soda substitute)
  • 1 tsp cinnamon
  • 1/4 tsp cloves
  • 1/2 tsp nutmeg
  • 1 1/2 c peeled and chopped apples

Directions:

Preheat oven to 350 degrees. Grease your muffin tins or use paper liners. Mix together oil, sugar, and eggs. Add in vanilla. In a separate bowl whisk together flour, baking soda, cinnamon, cloves and nutmeg. Mix into the wet ingredients. Stir in your chopped apples. Spoon into your prepared muffin tin and bake for 25 – 30 minutes. Place on a wire rack to cool.

These muffins are perfect fresh from the oven with a little butter. I also love to make extra and freeze them for a quick breakfast or snack throughout the week. You can see all of our FREEZER TIPS right HERE.
