Weeknight Beef Fajitas Made Easy!

If you are anything like me, you are tired of the same thing over and over for dinner every week. I am constantly looking for something different and exciting that everyone will love. I may have just found the newest hit for this house! I made these delicious Weeknight Beef Fajitas the other night, everyone loved them. Even the youngest teen had a second helping which just doesn’t happen very often. There was just enough left over for a fantastic Round 2 Recipe .. you can see that at the end of this post

When the local grocery store runs BOGO beef roasts, I can’t help but stock up on them. I get tired of cooking them the same way every time though. In the past, we have made Cola Pot Roast (which is still one of my all-time favorites!), Teriyaki Beef Skewers or Mongolian Beef. This time, I decided to add a little spice and a lot of love (for the hubby who just LOVES Mexican food) and make a batch of Beef Fajitas that are delicious, yet simple to make on a busy weeknight.

Here is what you will need:

Ingredients: 

  • 3 – 4 pound beef roast sliced thin (I used london broil)
  • 3 bell peppers sliced thin (try using a variety of colors. This gives the dish great flavor and it looks beautiful too)
  • 1 medium red onion sliced thin
  • small flour tortillas
  • 2 – 4 Tablespoons of olive oil for frying

Marinade:

  • 1/2 Cup olive oil
  • 3 Tablespoons Worcestershire sauce
  • Juice from 1 lime
  • 1 Tablespoon cumin
  • 1 Tablespoon chili powder
  • 1 teaspoon crushed red pepper flakes
  • 1 Tablespoon minced garlic
  • salt & pepper to taste

Toppings (optional)

  • Sour cream
  • Guacamole
  • Queso Fresco
  • Salsa
  • Shredded Cheddar Cheese

Directions: 

In a medium bowl whisk together the olive oil. Worcestershire sauce, lime juice, cumin chili powder, red pepper flakes, garlic, salt, and pepper until combined.

Pour half of your marinade over the thin beef strips and the other half over your fresh peppers and onions mixture.

Cover and refrigerate for at least 30 minutes. The longer you marinate the stronger the flavors will be.

Preheat 2 tablespoons of olive oil in a heavy skillet on medium-high heat. Once the pan is hot, add in your fajita veggies. Cook until soft and translucent. 6 – 8 minutes.

Remove the veggies from the pan and set them aside.

Add 2 Tablespoons of olive oil to the pan. Once the pan is back up to temperature, add your marinated beef strips. Cook just until browned on all sides. Stirring often. Don’t overcook the meat or it will be tough.

If you are not a fan of pink in the center, cook a bit longer than just brown on all sides.

The meat will brown up very quickly if your pan is hot enough. You want that quick sizzle sound as soon as your meat hits the pan. This will also help to lock in all the yummy juices.

Serve your Weeknight Beef Fajitas in warm flour tortillas, topped with your favorite toppings.

Note … If you have never tried Queso Fresco before, DO IT NOW!! This was the first time I had tried it, I was a little leery since I had never eaten it before and didn’t know what to expect. But I always see it on the Food shows and in commercials so I figured what the heck … Perfect creamy, and delicious! You must put it on your fajitas from this point forward!

Round 2 Recipe idea! 

If you happen to have leftover Beef Fajitas, warm the meat and veggies in the microwave or on the stovetop just until heated through. Place on top of a bed of crisp green lettuce. Top with your favorite Fajita toppings. I had to add it all on top, and I must say it was just as good on top of a salad as it was in the middle of a warm tortilla! This would be a great option for Low Carb eating as well.
