Making West Virginia Our Home: The Cookie Edition!

Hey there folks! I am so happy that you have stopped in today to take a look-see at the cookie edition of how we are making West Virginia our home. Would you look at that! I said folks and look-see in the same sentence.

I have truly officially adapted now. As a lot of you know, we moved here to the wild and wonderful state of West Virginia just over three years ago. I will forever be a New England girl at heart, but this move was probably one of the best decisions we have made in quite some time. That is why when I was asked to share a recipe from my home state using Bob’s Red Mill Flour, I had no problem calling West Virginia my home.

This recipe is part of the Bob’s Red Mill Flour 50 States of Cookies. Be sure to stop over to the official United States of Cookies page to see all of the great recipes from around the United States!

When we came to West Virginia a little over three years ago, I never had the intention of making this our home. We were actually coming here for a short vacation to visit my parents. That was the initial plan anyway.

After extending the vacation a few times, we decided to stick around. Little did I know it would be one of the best decisions of our lives. My children adapted very quickly, made some wonderful new friends, improved their grades, they even broke out of their social shell a bit more and discovered there is so much more adventure to see and live outside of the video game world. Being around my mom on a daily basis was the best perk of them all. Living in separate states from your parents is never easy.

The state fruit of West Virginia is the Golden Delicious apple. Did you know that the golden delicious apple is actually a hybrid?

According to Wikipedia, it is a chance seedling possibly a hybrid of Grimes Golden and Golden Reinette. The original tree was found on the Mullins’ family farm in Clay County, West Virginia, United States and was locally known as Mullin’s Yellow Seedling and Annit apple. Anderson Mullins sold the tree and propagation rights to Stark Brothers Nurseries, which first marketed it as a companion of their Red Delicious in 1914.

In 2010, an Italian-led consortium announced they had decoded the complete genome of the Golden delicious apple. It had the highest number of genes (57,000) of any plant genome studied to date.

There is a little history lesson for you. I never knew these cool facts. I love finding out where food originates from, it fascinates me. Since I am now an official resident of West Virginia, the Golden Delicious Apple was the inspiration behind my recipe for the 50 States of Cookies!

As I mentioned above, this post has been sponsored by Bob’s Red Mill Flour. The Organic Unbleached White Flour is freshly milled from Organic hard red wheat.

Both the bran and the germ have been removed leaving the endosperm that is made into white flour. It is not enriched with any additives. This is the same high protein flour used by professional bakers and produces high, well-textured loaves of bread equally as well as it produces light, airy baked goods. Bob’s Red Mill Flour is a kitchen staple and is incredibly versatile and perfect for all of your baking needs.

If you are in need of a Gluten Free version, Bob’s Red Mill offers that as well. It is perfectly formulated for baked goods with terrific taste and texture – no additional specialty ingredients or custom recipes required. This flour combines finely ground brown rice flour, sweet white rice flour, whole grain sorghum flour, potato starch, and tapioca flour with a touch of xanthan gum—just enough xanthan gum to create chewy cookies and springy muffins.

Candy Apple Sugar Cookie Cut Outs

Ingredients:

  • 3 cups flour
  • 2 tsp baking powder (or a baking powder substitute)
  • 1 cup sugar
  • 1 cup softened butter
  • 1 egg
  • 1 1/2 tsp vanilla

Directions:

In a medium bowl, whisk together the flour and baking powder. Set aside.

In a separate bowl combine the butter and sugar. Mix with an electric mixer until light and fluffy.

Mix in the egg and vanilla until mixed well.

Slowly add in the flour mixture until your dough is mixed but still crumbles.

Turn the cookie mixture out onto a lightly floured surface. Gently knead the dough until it forms a smooth ball.

Wrap the dough in plastic wrap and refrigerate for 30 minutes.

Preheat oven to 350 degrees.

Line your baking sheet with parchment paper.

Divide the dough into fourths. Working with one section at a time, roll the dough out on a piece of parchment paper that has been lightly dusted with Bob’s Red Mill Flour to 1/4 inch thick.

Use your favorite cookie cutters to cut out the shapes you desire.

Place the cut outs onto your parchment lined baking sheet, 1/2 an inch apart.

Bake in a 350-degree oven for 8 to 10 minutes, or until the edges are light golden brown.

Remove to a wire rack for cooling.

Once they are cool you can decorate them any way you like.

We chose to use Wilton melting chocolate to give them the true Candy Apple feel.

Here are some photos of the process.

This is how we made them …
